A Fiesta of Crepes!

Yesterday I was looking in the fridge for something to eat. We had Mexican food the other night and had some leftovers. I started looking online for something that I could possibly make out of the all the items left.
This is what I came up with:
Crepes:
3/4 milk
2 eggs
1 egg yolk
3 tablespoons slightly cooled butter
1/2 teaspoon salt
1/2 cup flour
Start by making this ahead of time. You blend all the ingredients in BLENDER and let sit for approx. 30 minutes. Letting it rest will release any airbubbles left sitting at the bottom.

Crepe filling-What makes it Mexican:
Spanish rice
Homemade refried beans
Sour cream
Homemade bean dip






Add oil to the pan and let it heat up.  Once water sizzles in it, the oil
is ready.  Quickly drop in the batter approx. measured
with 1/3 cup.

 Its so easy and fun! Making the batter is the
best part! Itm makes you feel like a REAL chef
in a REAL kitchen somewhere in New York!

And to top it off nicely, add Picante sauce and sour cream (there is no sour cream here though :)



















Don't worry! I didn't forget about dessert!







   Cherry-filled crepes.  You already have the crepes made all you need is the cherry pie filling and your set to go.




 Spread cool whip all over the crepe and top it with the cherry pie filling.


Roll it up nice and tight!
